0:00Even cultures that have a high intake of refined carbohydrate often are very lean.
0:04I mean, look at the Japanese.
0:06Japanese, not only do they eat a diet that is very high in refined carbohydrate and used to be even higher than it is now, back when they were even leaner than they are now.
0:19Not only is that diet primarily refined carbohydrate, white rice, of course, is their dietary staple, but the type of rice has a particularly high glycemic index.
0:32It's sticky white amylopectin rice.
0:38And so that type of rice digests really quickly.
0:41And yet, Japan historically, and even to this day, has the lowest rate of obesity among industrialized nations.
