0:00It took the government, kind of from what I've followed, twenty-five years to catch up with stuff like that.

0:04The past several decades have been terrible, unscientific, all about, you know, grains.

0:10And as a result, we've had, you know, huge rise and a lot of chronic disease, a lot of which is driven by a bad diet.

0:15You were the first person to teach me to put butter and coffee and, you know, not be afraid of saturated fats and to eat healthy and focus on real science, not junk science.

0:25We're now doing randomized controlled trials on saturated fats because we know they've been unfairly demonized, but there's more to learn and we want to learn.

0:32We can finally, like, for the first time ever, do real science and not be afraid of the consequences.

0:38And not really care if some entrenched interest doesn't want us to do the science.

0:43Terms like misinformation and disinformation, in my experience, are usually used by people that are trying to censor things or shout people down.

0:50And I don't have any patience with that.

0:51I know I'd lost a lot of trust in the pandemic.

0:53We're rebuilding that trust by being transparent and by focusing.

0:56I never would have imagined five years ago that I'd be talking with the guy running the CTC on the podcast or that you put butter in your coffees.
